The Buttered Biscuit, a beloved Northwest Arkansas institution, is more than just a breakfast spot; it's a community gathering place built on a foundation of love, care, and a commitment to making a difference. Founded by Anna, a Midwest gal who found her home in Arkansas, and her husband Sam, the vision was simple: create a warm, welcoming space where families and friends could enjoy high-quality, made-from-scratch breakfast dishes, free from fast food and shortcuts.
Their commitment to quality extends to every aspect of the business, including providing gluten-free options to their patrons. "We make everything from scratch. Everything is fresh, hand-chopped, and we pride ourselves in the difference you can taste," Anna says. "And our gluten-free options ensure that there's something for everyone, without skimping on flavor, texture, or consistently good food!"
"She's always presented a warm, welcoming feeling to everyone," Sam recalled, describing the early days of Anna working at the first store back in April 2017. "She would always be carrying around (our) first kid in a baby carrier and greeting tables"

"We started Project Biscuit because they have such a compelling call with employees and team" Anna explained. "All the biscuits we serve with the Eureka Sandwich have a portion that goes to help people in our community. "Anna was an underestimated category (woman-owned), he acknowledged. Last year, Project Biscuit both raised and donated over $10,000, demonstrating the impact of this community-focused initiative. "Getting to see first-hand people's lives transform and change, working with UA Pulaski Tech and Circles NWA, it's what keeps the fire lit."
On January 28th, The Buttered Biscuit opened its sixth location in the Heights, marking a significant milestone. This expansion reflects the brand's continued growth and commitment to serving the community. With a new team of almost 300 employees, the focus remains on creating new, uplifting opportunities for each individual who joins the family.

The Buttered Biscuit: Outfitted and Ready for Expantion
When Anna and Sam Russell first opened The Buttered Biscuit in Northwest Arkansas in 2017, their goal was to serve the community fresh, made-from-scratch biscuits, jams, jellies and other breakfast favorites using locally-sourced ingredients. The concept was a hit almost immediately, and in just a few short years the couple has brought their fresh-made food to other Northwest Arkansas communities. However, Russell understood that as the brand continued to expand, it was imperative to have a design that was not only efficient and productive, but also easy to implement in new locations.
“We wanted to work with a national team that could dynamically meet our needs for rapid growth as we expand in Arkansas and beyond. Collaborating for Success
The new kitchen design for The Buttered Biscuit location in Little Rock, AR, was a team effort between Starr Design and the Boelter team. The first priority was to look at the menu items and the processes already in place and find the right equipment to help implement them with consistency at each new location.
“We worked really closely with Boelter on this project, and it wasn’t just their relationships within the industry that were beneficial, it was their communication and collaboration that really helped make this project a success. They not only had knowledge of the new features and technologies available as we upgraded equipment but were always working closely with us and the Russells to stay within budget and get the best options for each situation.”

The Buttered Biscuit, a popular breakfast restaurant with four award-winning locations, has officially revealed the opening date of its newest location in the Heights neighborhood of Little Rock. The restaurant, located at 5016 Kavanaugh Blvd., will open its doors on Tuesday, Jan. 28, 2025.
Known for its scratch-made, Southern-inspired breakfast offerings with a modern twist, customer favorites include the Biscuits and Gravy, Avocado Grove Toast, Kickin’ Chicken Waffles, Lila Lemon Cakes, the Eureka and extensive gluten-free options. For every purchase of the Eureka, a fried chicken and bacon biscuit sandwich, $1 will go directly to Project Biscuit, the charitable arm of The Buttered Biscuit that helps propel underestimated individuals toward success.
The new Heights location will be led by general manager Jonathan Clark, who brings nearly 15 years of experience in the food and beverage industry, including three years with The Buttered Biscuit.

The Buttered Biscuit Sets Opening for Heights Location
Breakfast restaurant The Buttered Biscuit announced it will open its second Little Rock location in the Heights neighborhood on Jan. 28.
The opening was pushed back from fall 2024 due to challenges with the renovation and remodeling of the building at 5016 Kavanaugh Blvd.
The Bentonville-based chain, founded in 2017 by Anna and Sam Russell, opened its first Little Rock location at the Promenade at Chenal in May. The Kavanaugh restaurant will be the chain’s sixth in the state.
Anna Russell told Arkansas Business in September that The Buttered Biscuit is looking at opening two additional central Arkansas locations in 2025.
