The Buttered Biscuit Announces Partnership with UA-PTC Culinary School

LITTLE ROCK, ARK (KATV) — The Buttered Biscuit has announced a partnership with the University of Arkansas - Pulaski Technical College (UA-PTC) and will be donating a $5,000 scholarship to the Culinary Arts and Hospitality Management Institute (CAHMI).

The Buttered Biscuit is a beloved breakfast restaurant with award-winning locations in Northwest Arkansas and two more on the way in Little Rock.

The $5,000 scholarship will be awarded in the fall 2024 semester. The Buttered Biscuit co-founder, Anna Russell, said the scholarship goes deeper than making the next generation of talent.

“This long-term investment in the culinary institute is about more than just nourishing talent,” Russell said. “It's about shaping the futures of those with dreams just as big as mine were seven years ago. We’re excited for the opportunity to see the scholarship’s impact on students firsthand as we transition into the Little Rock market this year.”

The partnership is made possible through the Buttered Biscuit's Project Biscuit Charitable Fund, which was created by the business to help propel underestimated individuals forward in their professional and personal lives. The scholarship will be awarded to a culinary student who displays exceptional promise and drive, lessening the financial burden of higher education and increasing confidence in t he kitchen simultaneously. Director of CAHMI, Jan Lewandowski said she is grateful for The Buttered Biscuit's commitment to CAHMI.

“We extend our gratitude to The Buttered Biscuit for their investment in the future of culinary arts in the state,” said Lewandowski. “We look forward to continuing this partnership for many years to come.”

The Buttered Biscuit to Celebrate 5th Anniversary in Springdale

The Buttered Biscuit, a popular breakfast restaurant founded in Northwest Arkansas, will celebrate the fifth anniversary of its Springdale location on Oct. 17. Founded by husband-and-wife team Anna and Sam Russell in 2017, the restaurant has grown to five locations, earning recognition for its scratch-made meals and community-focused spirit.

To mark the milestone, the Springdale location will host a ribbon-cutting ceremony at 10 a.m. in collaboration with the Springdale Chamber of Commerce. The first 50 attendees will receive a limited-edition T-shirt and ‘Biscuit Bucks’ for future meals. The event celebrates the local community’s support, with co-founder Anna Russell stating, “It’s been a joy to bring people together over good food, and we look forward to many more.”

Known for its handcrafted dishes, The Buttered Biscuit offers popular menu items like Biscuits and Gravy, Kickin’ Chicken Waffles and an array of gluten-free options. The Best Breakfast in the South: The Buttered Biscuit

Sam and Anna Russell started The Buttered Biscuit in 2017 to bring handcrafted, scratch-made, locally sourced breakfast to Arkansas. The Buttered Biscuit's most recent opening was on May 29th in Little Rock at the Promenade at Chenal. "At the [beginning]," says Sam, "it was a husband helping his wife succeed at her dream. At the grand opening [in Bentonville], I was going to come in, give my wife a high-five, and say congratulations. It was so busy that I called my boss and told him I needed to stay and support my wife. There I am, opening day of the restaurant, sliding all over the floor in my leather wingtips. Within a week of opening, I decided to quit my corporate job and go into entrepreneurship full-time with my wife."

The Buttered Biscuit Set to Open First Little Rock Location May 29

Little Rock’s breakfast and brunch scene is about to get even tastier.

The Buttered Biscuit, a family-favorite Bentonville-based restaurant, is opening its doors to the new Little Rock location on May 29 at The Promenade at Chenal.

Known and loved for its made-from-scratch cooking, The Buttered Biscuit serves breakfast, brunch and lunch options including biscuits and gravy, avocado toast, chicken and waffles, lemon cakes and much more. The restaurant’s classic central-Southern dishes are delicious, comforting and filling, and can be modified for dairy and gluten-free preferences.

Restaurant goers can feel especially good about eating good when ordering the popular “Eureka” dish. Made with fried chicken, bacon, tomato, lettuce, cheddar cheese and egg on a biscuit, $1 of proceeds from every Eureka sold will go directly to Project Biscuit, a charitable branch of the restaurant that helps propel underestimated individuals toward success.

Founded in 2017 by Anna and Sam Russell, The Buttered Biscuit operates four award-winning locations in northwest Arkansas. The first Little Rock location will reside in west Little Rock at The Promenade, while another location is in the works to open in The Heights later this year.

According to our sister publication Arkansas Business, Sam Russell, CEO and co-founder of The Buttered Biscuit, shared that the Chenal restaurant encompasses about 3,500 square feet and includes a “beautiful patio,” which is another 900 square feet. The restaurant is located in the former Tavern Sports Grill space and will seat about 110 inside and another 60 outside.

The amount invested in the two Little Rock locations is almost three times what The Buttered Biscuit has invested in previous buildouts. The two new stores will serve as prototypes for future growth.

“We’re so excited to share our passion for food and hospitality with west Little Rock soon,” said Anna Russell, co-founder of The Buttered Biscuit. “This store’s design and atmosphere is one of a kind, and we can’t wait to see the community begin filling up its tables in just a few weeks.”

The Buttered Biscuit will be open seven days a week. Doors will be open from 6:30 a.m. to 2 p.m. Monday through Friday and 7 a.m. to 3 p.m. Saturday and Sunday. For a full look at the menu, click here.

Nobody does breakfast ‘butter’ than The Buttered Biscuit

Anna and Sam Russell love breakfast, but they couldn’t find a restaurant that they liked. So, the couple opened their own place, The Buttered Biscuit in Northwest Arkansas.

Sam, who was in consumer packaged goods for a national company, credits Anna as the visionary behind the venture.

“Anna felt led to open a restaurant and began calling Realtors,” Sam said. “We decided to put breath into her dream. We went in full steam ahead and opened our first location in April 2017. It just took off, and it never slowed down. Within a week, I had resigned my position with my employer to help with the restaurant. It exceeded our expectations tremendously, as the restaurant met a consumer desire.”

The couple had a 4-month-old, and Anna was pregnant around the time of the opening of the first location. Their family, which has four children, grew along with the business.

Today, Buttered Biscuit has two Bentonville locations, a Springdale location and a Fayetteville location.

The couple’s talents balance the enterprise and fuel the ongoing success. Sam’s strengths include planning and branding, while Anna has a remarkable entrepreneurial spirit. The couple experimented with many recipes before opening their first location, and continues to evaluate and update the menu.

At the Springdale location, I asked my excellent server Olivia to help me pick out dishes to try. She steered me in the right direction.

The Buttered Biscuits and Gravy are a bestseller. The Avocado Grove Toast is a great menu item for those looking for something a little lighter. I enjoyed every bite of the rustic sourdough bread topped with melted Swiss cheese, avocado spread, two sunny-side-up eggs, fresh ground pepper and pepitas. The toast was served with a fresh side salad.

The Kickin’ Chicken Waffles are a winner, winner, featuring a spicy fried chicken fillet on a signature waffle served with delicious bacon jam, syrup, powdered sugar and two eggs.

Who needs to go to New Orleans for beignets when you could have the fabulous house-made Raspberry Beignets at The Buttered Biscuit? Each mouthful was enhanced by raspberry melba, orange honey butter and powdered sugar. Lemon curd and cinnamon sugar are other varieties.

The Buttered Biscuit’s Raspberry Beignets are served with orange honey butter and topped with raspberry melba and powered sugar.

The menu offers many biscuit sandwiches, including the Eureka. This creation features a golden fried chicken fillet topped with bacon, tomato, lettuce, cheddar cheese, egg and cilantro aioli on a homemade biscuit.

The Lila Lemon-Cakes, fluffy blueberry pancakes layered with lemon curd, blueberries and sweet cream, are excellent — a wonderful, sweet and tangy treat. Omelets, Benedicts, breakfast bowls and traditional breakfast items are also available.

Sam and Anna worked with locally owned Onyx coffee to develop the blend offered. According to Sam, coffee is “the pinnacle” to them.

All four locations of The Buttered Biscuit have great service and wonderful food while maintaining an atmosphere that is clean and sleek, yet warm and homey.

Breakfast at The Buttered Biscuit

I recently found myself circling a restaurant’s crowded parking lot, while hoping for just one spot to open up. Truth be told, it was a tad frustrating, but it also signaled a potentially positive upcoming dining experience. Such is life at The Buttered Biscuit in Bentonville on a random Sunday morning.

Fair warning, the place is popular, but within five minutes, I found a parking spot. After a quick, ten-minute wait inside, our party of six had a table, menus, and fresh Onyx Coffee. All was good.

Our server’s friendly, down-home personality was a welcoming sight, but so, too, was the clean, modern feel of the restaurant and the expansive menu of breakfast offerings. From the look of things, The Buttered Biscuit is a well-oiled machine. And did I mention the Onyx Coffee? You won’t find better in these parts.

After settling in, we weren’t bashful with our ordering. We started the festivities with The Buttered Biscuit Cinnamon Roll and Biscuit Beignets. The former was a delightfully gooey concoction, topped with a thick line of cream cheese frosting. A few bites acted as a nice palette-opening appetizer.

For my entrée, I opted for the Eureka biscuit sandwich. Did you think I was about to walk into The Buttered Biscuit and not try a biscuit? No way. It proved to be a very traditional take on a classic Southern staple. Light, fairly fluffy, but with a good bite, this biscuit also had a nice crumble. Unfortunately, this crumbly trait can be a bit of an obstacle when navigating a sandwich, as things tend to fall apart with each bite. That said, the Eureka, with its fried chicken, bacon, cheddar, fried egg, and cilantro aioli, was a messy winner, as was another biscuit sandwich, the Razorback (fried egg, sausage, tomato, avocado, green onion, and comeback sauce).

The Kickin’ Chicken Waffles was successful as well. I have never been a tremendous fan of the ever-popular chicken and waffles, but I will say The Buttered Biscuit does an excellent job with its rendition, pairing crispy, deep-fried chicken strips with a light and airy waffle. The duo dosed with a heavy pour of maple syrup is the way to go. I suggest making the waffle, which is also available as a stand-alone item, a must-order on your next visit.

There is a lot to like about The Buttered Biscuit, not the least of which the restaurant’s focus on using fresh, quality ingredients. It’s easy to see why Northwest Arkansas has embraced the eatery. Two locations are now in Bentonville and a new restaurant just opened in Springdale.

Just remember, do not get too frustrated if a parking space isn’t immediately available.

One will open up.
